And most importantly — no complicated ingredients or meat are needed. ## Ingredients * zucchini — 3 pcs; * onion — 2 large bulbs; * tomatoes — 2–3 pcs; * feta cheese — 180–200 g; * cheese for baking (mozzarella, gouda, Russian or Dutch) — 100–150 g; * garlic — 2–3 cloves; * dill — a small bunch; * parsley — a small bunch; * Italian herbs — 1 tsp; * salt — to taste; * black pepper — to taste; * sugar — 1 tsp; * vegetable oil for frying. ## Preparing the Zucchini Cut the zucchini in half lengthwise, keeping the stem — this will make the dish look particularly impressive. Make crosswise cuts in the flesh, being careful not to damage the skin. Then carefully scoop out the inner part with a spoon, forming boats. Do not throw away the flesh — it will be needed for the filling. To enhance the flavor, lightly fry the boats in vegetable oil cut side down until a light golden crust forms. ## Preparing the Filling Dice the onion and sauté it in a small amount of oil. Add a pinch of salt and a little sugar — this will help the onion caramelize faster and acquire a pleasant aroma. When the onion turns golden, add the diced zucchini flesh and cook for another five minutes. Then add the chopped tomatoes to the pan, stir, and simmer for another 2–3 minutes. Remove the vegetable mixture from the heat and let it cool slightly. After that, add the minced garlic, crumbled feta, finely chopped herbs, salt, pepper, and Italian herbs. Thoroughly mix the filling until smooth. ## Baking Lightly grease a baking dish with vegetable oil. Place the prepared boats in the dish, fill them with the filling, and generously sprinkle with grated cheese. Bake in a preheated oven at 200 degrees for 25–30 minutes. The zucchini should become soft, and the cheese should melt and acquire an appetizing golden crust. ## Serving Before serving, sprinkle the dish with fresh herbs. Zucchini boats are perfect for a light dinner or lunch on a hot summer day. They turn out juicy, fragrant, and so delicious that even meat lovers usually ask for seconds.
