Pumpkin is suitable not only for soups and casseroles. You can make a quick and hearty breakfast without complicated ingredients and long preparation. Here are three simple recipes that are easy to replicate at home. ## Pumpkin Fritters **Ingredients:** - 300 g pumpkin; - 1 egg; - 3–4 tbsp flour; - 1–2 tbsp sugar; - a pinch of salt; - ½ tsp baking powder; - a pinch of cinnamon; - vegetable oil for frying. **Preparation:** Grate the pumpkin on a fine grater and lightly squeeze out the excess juice. Add the egg, sugar, salt, cinnamon, flour, and baking powder. Mix — the batter should be thick. Heat a skillet with a small amount of oil. Spoon the batter onto the skillet and fry the fritters over medium heat on both sides until golden brown. The finished fritters can be served with sour cream, yogurt, honey, or jam. ## Pumpkin Cheese Pancakes **Ingredients:** - 250 g cottage cheese; - 150 g pumpkin puree; - 1 egg; - 2–3 tbsp flour; - 1–2 tbsp sugar; - a pinch of salt; - vanilla — optional; - oil for frying. **Preparation:** Cut the pumpkin into small pieces and bake until soft. Then mash it into a smooth puree and let it cool slightly. Mash the cottage cheese with a fork and mix it with the pumpkin puree, egg, sugar, and salt. If desired, add a little vanilla. Stir in the flour until a soft mass is obtained. Shape small pancakes, lightly coat them in flour, and fry over moderate heat on both sides until golden brown. ## Pumpkin Oatmeal **Ingredients:** - 50 g oatmeal; - 150 g pumpkin puree; - 200 ml milk or plant-based drink; - 1 tsp honey; - a pinch of cinnamon; - nuts or seeds — to taste. **Preparation:** In a small saucepan, combine the milk, oatmeal, and pumpkin puree. Cook over low heat for about 5–7 minutes, stirring occasionally, until the porridge becomes creamy and thick. Add cinnamon and honey. Before serving, sprinkle the oatmeal with nuts or seeds. **Tip:** If you prepare more pumpkin puree in advance, it can be stored in the refrigerator for several days and used for quick breakfasts. This way, making fritters, cheese pancakes, or oatmeal will take even less time.
