Italian chef Davide Tamburella, who worked at La Costa restaurant in Brisbane, Australia, lost his job after repeatedly refusing to make pizza with pineapple. According to the Dutch broadcaster [NOS](https://nos.nl/artikel/2638128-belediging-van-mijn-cultuur-chef-vecht-ontslag-aan-na-weigering-ananas-op-pizza), the chef considered such a combination of ingredients unacceptable and openly stated that pineapple on pizza offends his national culture. ## Three refusals in four years Tamburella worked at the restaurant for four years. During that time, he admitted to having refused three times to fulfill customers' requests to add pineapple to the pizza. The chef explained his position not as a matter of personal taste preferences, but out of respect for Italian culinary traditions. He even recommended that the restaurant management find out how seriously Italians take such experiments with a national dish. However, the management held a different opinion: if a customer orders a pizza with a specific topping, the chef must fulfill the order. On May 20, Tamburella was fired. Two weeks prior, his employer invited him to discuss complaints regarding his job performance. One of the reasons for the dissatisfaction was indeed his unwillingness to make pizza with pineapple. ## It was not just about the pineapple Restaurant owner Elliot Ingram stated that the story is much more complex than it may seem at first glance. According to him, the refusal to fulfill a customer's order was just one of the complaints against the employee. Management also expressed dissatisfaction with the chef's manner of communication with colleagues, his use of inappropriate expressions, and conflict situations during customer service. Thus, the pineapple pizza became the most noticeable, but far from the only episode of the labor conflict. ## The chef appealed to the labor commission Disagreeing with his dismissal, Tamburella decided to contest the employer's decision in the Australian Fair Work Commission. He insisted that his refusal to make pizza with pineapple was dictated by respect for his own culture. However, he was unable to achieve reinstatement. Moreover, the commission did not even consider whether the employer had sufficient grounds for dismissal. It turned out that the chef missed the legally established deadline for filing a complaint. He approached the commission only in July, although the deadline had expired in early June. As a result, the application was rejected on procedural grounds. Therefore, the question of whether the chef has the right to refuse to prepare a dish for cultural reasons remains without a definitive legal answer. ## Dismissal complicated obtaining residency For the Italian, losing his job had other unpleasant consequences. According to Australian and British media, Tamburella had been working for over three years on paperwork to obtain permanent residency in Australia with the support of his employer. After his dismissal, this process was interrupted. Nevertheless, the chef did not remain unemployed for long. He is now working as a head chef at another Italian restaurant in Brisbane — Don Gino. And here the story has an almost perfect resolution: the new establishment's menu does not include pizza with pineapple. Meanwhile, the La Costa restaurant, which sparked the conflict, has since ceased operations altogether. So, in the dispute over whether pineapple has a right to be on pizza, there is still no definitive winner. But Davide Tamburella seems to have found a place where his culinary principles no longer cause disagreements.
